Dr. Priscilla Connors (associate professor) is a researcher in the area of food choice and waste who specializes in online nutrition education. She holds an MBA from Binghamton University (New York) where she specialized in Management Information Systems and learned to program in COBOL and PL1. This background helped her recognize the potential of online learning and see the move to Internet as an exciting educational opportunity. She has presented her work in the scholarship of online teaching and learning at Society for Nutrition Education and Behavior Conferences and Blackboard World where she was an invited speaker.
Dr. Connors is a Registered Dietitian Nutritionist and earned her PhD in Nutrition at Texas Woman's University. She has consulted on the design of human-computer interfaces for nutrient databases and used nutrient analysis software to evaluate foods served in institutional settings such as hospitals and schools. She has worked as a Clinical Dietitian in hospitals in Texas and New York State and assisted hospital dietary departments understand the effectiveness of nutritional services by evaluating patient acceptance of meals. The U.S. Department of Agriculture and National Dairy Council have funded her research in food choice and waste. She recently finished a study of food expiration labels that highlighted how consumer misunderstanding contributed to waste of safe nourishing foods and concluded that a better job educating about food safety is needed.
